Lemon Basil Grilled Swordfish – From Donna Casciello

Ingredients:

1lb fresh Swordfish                         1 tbsp. fresh parsley
½ cup dry white wine                     1 tbsp   fresh basil
½ tsp shredded lemon peel         1 tsp dried oregano
2 tbsp Lemon juice                          2 tbsp olive oil  
Lemon wedges                                  sprigs of Fresh parsley and basil

You may also use your favorite fish fillet in place of the swordfish.

Divide Fish into 4 equal portions and place in a baking dish.

To make marinade,  stir together wine, lemon peel, lemon juice, olive oil, parsley, basil, & oregano. Then pour over fish. Cover and let marinate in refrigerator for at least an hour. When ready drain fish and reserve marinade.
Grease the grill rack, place the sprigs on the grill and place fish on top of it.
Cook about 3 or 4 minutes and marinate it while cooking, turn over once, continue to marinate until done. Serve with Lemon wedges .
